Ecco la crema con cui ho farcito la torta per mio figlio:
345ml milk
4 egg yolks
30 g cornstarch
100 g granulated sugar
Pinch of salt
½ stick or 57 g butter
115 g semi-sweet chocolate, finely chopped
5 ml vanilla extract
In large bowl, whisk ²/³ milk, egg yolks and cornstarch until smooth.
In large saucepan, stir together remaining milk, sugar and salt until well combined. Cook over medium heat until steaming, but do not boil.
While whisking, slowly stream about half of hot milk into egg yolk mixture to warm. Transfer back into saucepan. Continue cooking, stirring constantly, until mixture thickens and boils.
Remove from heat and stir in butter, chocolate and vanilla extract.
Cover top directly with plastic wrap and chill in refrigerator until completely cool.
Era perfetta!!!
